Shortcake, home-made raspberry jam and almonds make a perfect composition for foodies. We tend to spoil our loved ones and friends with sweets for Halloween. Today I’d like to introduce a recipe for simple witch fingers that everyone will find tasty!
They are super easy to make, and shaping and decorating them is a great fun for bigger and smaller cooks!
- 250g wheat flour
- 120g vegan butter
- 100g icing sugar
- 50g potato starch
- pinch of salt
- 1/2 tsp baking soda
- 400g raspberries
- 3 tbs cane sugar (or more, if you prefer)
- 2 tbs water
Mix all the ingredients together, except for raspberries and almonds. Shape the dough into a ball and let it cool in a fridge for 20 minutes.
Preheat the oven and the baking tray layered with baking paper to 180C.
Heat the raspberries with syrup till the water evaporates, then puree them.
Take the dough out of the fridge, pluck small portions and shape them in finger-like sticks. Use the spoon handle to shape place for almond nails and knife to make joint-like cuts.
Place your cookies on a baking tray and keep in the oven for 15 minutes.
Put the raspberries in a pot with sugared water and boil until the fruits disintegrate. Boil the sauce a while more to make it thicker and become a jam. Sieve the lukewarm mixture through a fine sieve. Et voila!
After cookie fingers cool, spread some jam on their base and where the fingernail should be, then stick the almond nail. Ready to serve!
