I adore fava beans and I wait whole year to delight in its taste. I guess I could eat it all year round, with no extras, but this time I decided to make a fava salad. There was a decent occasion: my mom celebrated her birthday and all close relatives were invited to the party. And because my family loves pasta, that ingredient became the main ingredient of my salad. Starchy insert made it a full meal of its own. Nutritious, quick and tasty, just as a healthy salad should be:)

 

Ingredients:


⭐️ bunch of radishes
⭐️ 600g fava beans
⭐️ cherry tomatoes
⭐️ fresh dill
⭐️ parsley
⭐️ 100g dry wholegrain penne or wild rice
⭐️ 4 tbs extra virgin olive oil
⭐️ salt, pepper
⭐️ basil
⭐️granulated garlic
⭐️ pinch of chili

 

How-to:


Steam the fava beans. Cook the pasta following the instructions on the package. Rinse the tomatoes and radishes and cut them in quarters.  Finely chop the dill and parsley.
Add everything into a bowl.
Mix olive oil, salt, pepper, basil, garlic and chili in a glass. Add a tablespoon of sparkling mineral water. Pour the sauce over the ingredients in a bowl, mix.
