Good soup is a must during the cool days of fall.
Delicious and aromatic, can warm us up and fill us with energy.When aura of fall enters my kitchen, I always make cream of baked pepper and tomato soup, which is not only divine in taste, but also reminds me of the hot summer and rays of sunshine which pampered our bodies. This food cheer-up never fails.

Ingredients:


  • 1 kg tomatoes
  • 1 kg bell pepper
  • 4 cloves garlic
  • 1/2 onion
  • 1 tbs Himalayan salt
  • 1 tsp rosemary
  • pinch of pepper
  • 600 ml water
  • 2 tbs grape seed oil
  • 2 tbs chopped parsley
  • edible flowers as decoration (optional)

How-to:


Wash pepper and tomatoes and place in a casserole dish with peeled garlic clove and onion, pour the oil over veggies and add spices. Bake for 45 minutes in 190C. Peel the tomatoes and peppers when cooled. Put into the mixing bowl and add all the juices created during baking process. Add the remaining ingredients and blend for 3 minutes until smooth. Pour into a pot and heat up. Serve as you prefer; I decided to sprinkle the cream with sunflower seeds and edible flowers.
